Ruta Maya Coffee is USDA certified organic by the Texas Department of Agriculture and Mayacert. Organic farming is central to our work and supports the health of the environment, farmers, and our customers. Our coffee contains no genetically modified ingredients, pesticides, or herbicides. Under FDA guidelines, any artifical modifications would prevent a product from receiving organic certification.
While we are not Fair-Trade certified, our sourcing goes beyond Fair-Trade requirements. Ruta Maya is built on direct, longstanding relationships with independent farmer cooperatives. By working directly with farmers and avoiding third-party brokers, we're able to pay farmers above-market prices, ensuring they receive more than they would through conventional Fair-Trade channels. This approach supports local farming communities and keeps costs fair for customers.
No. We only roast coffee in our facility, meaning there is no risk of gluten, nut, or dairy cross-contamination. Our coffee is safe for those with allergies or sensitivities.
We’ve chosen not to produce single-use coffee pods as part of our commitment to sustainability. For those using pod-based brewers, we encourage the use of reusable pods that are compatible with most machines.
Brewing and Storage
Our coffee beans work well with all brewing methods and appliances. Preferences vary, but we always enjoy a classic French press.
Using the right grind size is key to getting the best flavor from your brewing method. As a guide:
Espresso: Fine
Pour Over: Medium-Fine
Drip Coffee Makers: Medium
Chemex: Medium-Coarse
French Press: Coarse
Cold Brew: Extra Coarse
We encourage small adjustments to find the profile that suits your taste.
Keep your beans in a cool, dark, and dry place to maintain their freshness. Our kraft paper bags are double-lined and resealable with a one-way degassing valve, making them ideal for long term storage. For our burlap bags, we recommend transferring the beans to an airtight container for maximum longevity.
Each bag is stamped with a roast date and remains fresh for up to 1 year from that date when stored in a cool, dry place. Pre-ground coffee stays fresh for 3–5 months in a sealed bag and 2–4 weeks once opened.
Shipping and Returns
Orders are typically processed within 3 business days and arrive within 7–10 business days via UPS Ground. Currently, we only ship orders through our website within the continental United States. We accept major payment methods, including:

Retail Locations
We closed our independent brick-and-mortar coffeehouse in Austin in 2012. While we no longer operate our own café, Ruta Maya Coffee is served at an airport-operated café in Austin-Bergstrom International Airport and through retail partners across the country.
